Instructions
- 1. Preheat the oven to 350 degrees.
- 2. In a large mixing bowl, combine oats, carrots, pecans, walnuts, coconut (if using), maple syrup, coconut oil, cinnamon, salt, ginger, nutmeg, and cloves.
- 3. Toss the mixture well until combined.
- 4. Spread the mixture evenly on a baking sheet and bake for 25 minutes, stirring halfway through.
- 5. Allow the granola to cool to room temperature, then add raisins and toss to combine.
- 6. Enjoy immediately or store in a sealed container for up to 2 weeks.
