  • 2 tablespoons coconut aminos
  • 2 teaspoons fish sauce
  • ½ teaspoon cayenne pepper
  • 2 pieces eggs
  • ½ cup green onions, diced

Seasoning

  • to taste pepper

Instructions

  1. Chop sweet potatoes into small chunks and process them in a food processor until they resemble rice.
  2. In a large pan over medium-high heat, brown the ground pork, seasoning with salt and pepper.
  3. Once the pork is browned, drain excess fat if desired, leaving some in the pan.
  4. Add the sweet potato rice and diced green onions to the pan, along with coconut aminos, fish sauce, and cayenne pepper. Cook until sweet potatoes soften.
  5. Crack the eggs into the pan and scramble them until fully cooked.
  6. Taste and adjust seasoning with salt and pepper, then remove from heat and serve.
