Instructions
- Chop sweet potatoes into small chunks and process them in a food processor until they resemble rice.
- In a large pan over medium-high heat, brown the ground pork, seasoning with salt and pepper.
- Once the pork is browned, drain excess fat if desired, leaving some in the pan.
- Add the sweet potato rice and diced green onions to the pan, along with coconut aminos, fish sauce, and cayenne pepper. Cook until sweet potatoes soften.
- Crack the eggs into the pan and scramble them until fully cooked.
- Taste and adjust seasoning with salt and pepper, then remove from heat and serve.
