Pork Fried Rice

Ingredients

  • 4 teaspoons vegetable oil
  • ¾ pound pork tenderloin
  • ½ cup yellow onion
  • 2 carrots peeled and sliced
  • ½ cup frozen peas
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 2 eggs lightly beaten
  • 3 cups cooked white rice
  • 3 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • to taste salt
  • to taste pepper
  • ¼ cup green onions

Instructions

  1. 1. Heat 2 teaspoons of oil in a large pan over medium-high heat and season the pork with salt and pepper.
  2. 2. Cook the pork in a single layer for 4-5 minutes until browned and cooked through, then remove and keep warm.
  3. 3. Add 1 teaspoon of oil to the pan, then stir in the onion and carrots, cooking until softened.
  4. 4. Add garlic and ginger, cooking for an additional 30 seconds, then remove and keep warm.
  5. 5. Pour the remaining oil into the pan, add the eggs, and scramble them until cooked.
  6. 6. Add the rice, pork, cooked veggies, and peas to the pan, stirring in soy sauce and sesame oil until combined and warmed through.
  7. 7. Sprinkle green onions on top and serve immediately.
