Pork Fried Rice

Instructions
- 1. Heat 2 teaspoons of oil in a large pan over medium-high heat and season the pork with salt and pepper.
- 2. Cook the pork in a single layer for 4-5 minutes until browned and cooked through, then remove and keep warm.
- 3. Add 1 teaspoon of oil to the pan, then stir in the onion and carrots, cooking until softened.
- 4. Add garlic and ginger, cooking for an additional 30 seconds, then remove and keep warm.
- 5. Pour the remaining oil into the pan, add the eggs, and scramble them until cooked.
- 6. Add the rice, pork, cooked veggies, and peas to the pan, stirring in soy sauce and sesame oil until combined and warmed through.
- 7. Sprinkle green onions on top and serve immediately.
