Ingredients

The crust

  • 1 ¼ cups almond flour
  • ½ cup arrowroot flour
  • 3 tbsp coconut flour
  • 1 tsp cinnamon
  • ¼ cup coconut sugar
  • ¼ cup ghee, NOT melted
  • 1 egg egg

The topping

  • 3 apples of choice
  • 1 small lemon (juice)
  • 2 tbsp arrowroot flour
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 3 tbsp coconut sugar

The glaze

  • 1 can full fat coconut milk
  • ¼ cup coconut sugar
  • 1 tsp vanilla extract
  • ¼ tsp sea salt

Instructions

  1. Preheat the oven to 375°F.
  2. In a food processor, pulse all crust ingredients until a sticky dough forms.
  3. Place the dough in a 9-inch pie dish and refrigerate for 30 minutes.
  4. Remove from the fridge and press the dough evenly into the pan, including the edges.
  5. In a saucepan over low heat, combine glaze ingredients and stir for about 5 minutes.
  6. Cover the glaze and remove from heat to thicken.
  7. Slice the apples thinly and toss them with the remaining topping ingredients in a large bowl.
  8. Transfer the apple mixture to the pie dish in an even layer.
  9. Bake for 20 minutes, then cover with foil and bake for another 20 minutes.
  10. Drizzle the glaze on top and sprinkle with sea salt flakes before serving.
