The glaze

Instructions
- Preheat the oven to 375°F.
- In a food processor, pulse all crust ingredients until a sticky dough forms.
- Place the dough in a 9-inch pie dish and refrigerate for 30 minutes.
- Remove from the fridge and press the dough evenly into the pan, including the edges.
- In a saucepan over low heat, combine glaze ingredients and stir for about 5 minutes.
- Cover the glaze and remove from heat to thicken.
- Slice the apples thinly and toss them with the remaining topping ingredients in a large bowl.
- Transfer the apple mixture to the pie dish in an even layer.
- Bake for 20 minutes, then cover with foil and bake for another 20 minutes.
- Drizzle the glaze on top and sprinkle with sea salt flakes before serving.
