Banana Snack Cake

Ingredients

  • 3 large bananas, mashed (about 1 ¾ cup mashed)
  • 1 cup peanut butter or almond butter
  • 3 large eggs
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¾ cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350ºF and grease a 9-by-13-inch pan.
  2. In a large bowl, mash the peeled bananas with a fork until relatively smooth.
  3. Add the peanut butter, eggs, vanilla, baking powder, cinnamon, and salt to the mashed bananas and stir until combined.
  4. Fold in ½ cup of chocolate chips, if using.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Sprinkle the remaining chocolate chips on top, then bake for about 30 minutes or until the center feels firm.
  7. Let the cake cool completely in the pan before slicing into 12 to 15 slices.
