Ingredients

Wet Ingredients

  • 2 medium bananas, mashed
  • 2 large eggs
  • ¼ cup plain, nonfat Greek yogurt
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup plain, unsweetened almond milk
  • ¼ cup maple syrup

Dry Ingredients

  • cups white whole wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • teaspoon salt

Instructions

  1. Preheat the oven to 350ºF and grease a 10-inch cast iron skillet with about 2 teaspoons of coconut oil.
  2. Mash the bananas in a medium bowl until smooth, then add the liquid ingredients and whisk until combined.
  3. In a large bowl, mix all the dry ingredients together.
  4. Combine the wet and dry ingredients until well mixed.
  5. Pour the batter into the greased skillet and bake for 30-35 minutes, or until a toothpick comes out clean.
