Instructions
- Preheat the oven to 350°F and lightly grease an 8X8- or 9X9-inch baking pan.
- In a mixing bowl, cream together the butter and brown sugar until light and creamy.
- Add the mashed bananas, eggs, and vanilla, mixing until well combined.
- Stir in the oats, flour, baking powder, cinnamon, baking soda, salt, and chocolate chips until just combined.
- Spread the batter evenly in the prepared pan.
- For the streusel, mix together the oats, coconut, brown sugar, and melted butter until combined, then spread over the cake batter.
- Sprinkle additional chocolate chips on top if desired.
- Bake for 25-30 minutes until a toothpick comes out clean or with moist crumbs.
