Ingredients

Cake

  • ½ cup butter, softened
  • ½ cup packed light or dark brown sugar
  • 1 cup very ripe, mashed bananas (about 3 medium bananas)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1⅓ cup old-fashioned rolled oats
  • ¾ cup all-purpose or whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate chips

Streusel

  • ½ cup old-fashioned rolled oats
  • ½ cup sweetened or unsweetened coconut flakes
  • ¼ cup packed light brown sugar
  • ¼ cup melted butter
  • to taste chocolate chips (for sprinkling)

Instructions

  1. Preheat the oven to 350°F and lightly grease an 8X8- or 9X9-inch baking pan.
  2. In a mixing bowl, cream together the butter and brown sugar until light and creamy.
  3. Add the mashed bananas, eggs, and vanilla, mixing until well combined.
  4. Stir in the oats, flour, baking powder, cinnamon, baking soda, salt, and chocolate chips until just combined.
  5. Spread the batter evenly in the prepared pan.
  6. For the streusel, mix together the oats, coconut, brown sugar, and melted butter until combined, then spread over the cake batter.
  7. Sprinkle additional chocolate chips on top if desired.
  8. Bake for 25-30 minutes until a toothpick comes out clean or with moist crumbs.
