Ingredients

The cake

  • 1 cup old-fashioned oats
  • ½ cup salted butter
  • 1 ¼ cups boiling water
  • 2 large eggs
  • ¾ cup granulated sugar
  • 1 ¼ cups light or dark brown sugar
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 ¾ cups all-purpose flour
  • 1 ¼ cups chocolate chips

Cream Cheese Frosting (optional)

  • 4 tablespoons butter
  • 4 ounces cream cheese
  • ½ teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and grease a 9x13-inch baking pan.
  2. In a medium bowl, combine oats and butter, then pour in boiling water and let cool.
  3. In a large bowl, whisk together eggs, granulated sugar, brown sugar, salt, baking soda, baking powder, and cinnamon.
  4. Stir in the cooled oatmeal mixture until combined.
  5. Add flour and chocolate chips, stirring until just combined.
  6. Spread the batter in the prepared pan and bake for 30-40 minutes.
  7. Let the cake cool completely in the pan.
  8. For frosting, whip butter and cream cheese until smooth, then add vanilla and powdered sugar, mixing until creamy.
  9. Frost the cooled cake or serve with ice cream.
