Ingredients

The cake

  • 1 ¼ cups water
  • 1 cups chocolate chips
  • 1 ½ cups all-purpose flour
  • 2 tablespoons all-purpose flour
  • 1 cups rolled oats
  • ½ cups unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cups granulated sugar
  • 1 ¼ cups packed dark brown sugar
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 ½ teaspoons ground cinnamon

The cream cheese frosting

  • 5 tablespoons unsalted butter
  • 5 ounces cream cheese
  • 2 cups confectioners’ sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F and grease a 9x13-inch baking pan.
  2. Boil the water and toss the chocolate chips with 2 tablespoons of flour to prevent sinking.
  3. Combine oats and butter in a bowl, pour boiling water over, and let it sit for 25-30 minutes.
  4. In another bowl, whisk eggs, vanilla, sugars, salt, baking soda, baking powder, and cinnamon.
  5. Fold in the cooled oat mixture and then the remaining flour and chocolate chips.
  6. Pour the batter into the prepared pan and bake for 35-40 minutes until a toothpick comes out clean.
  7. Cool the cake on a wire rack.
  8. While cooling, prepare the frosting by beating butter and cream cheese until smooth, then add sugar and vanilla.
  9. Frost the cooled cake and serve.
