Chocolate Oatmeal Cake

Ingredients

  • 1 cup Quick Cook Oats
  • 1 cup Brown Sugar
  • 1 cup White Sugar
  • 8 tbsp Salted Butter
  • 2 large eggs
  • 1 ¾ cup Flour
  • 1 tsp Baking Soda
  • 1 tbsp Cocoa Powder
  • 12 ounces Chocolate Chips
  • ¾ cup Walnuts
  • 1 cup Boiling Water

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, pour boiling water over the oats and let stand for 10 minutes.
  3. Cream together the butter, brown sugar, and white sugar using a mixer.
  4. Add the eggs and mix until just combined.
  5. Stir in the oatmeal mixture.
  6. Add the flour, baking soda, and cocoa powder until just combined, being careful not to overmix.
  7. Fold in half of the chocolate chips and walnuts.
  8. Grease a 9x13 inch pan with flour and butter.
  9. Pour the batter into the pan and top with the remaining chocolate chips and walnuts.
  10. Bake for 35-40 minutes or until a toothpick comes out clean.
