Instructions
- Preheat the oven to 350°F and prepare a baking dish with non-stick spray.
- Soak the oats in boiling water until cooled.
- In a mixing bowl, whip together the butter, brown sugar, and granulated sugar until fluffy.
- Add the eggs, vanilla, cinnamon, and nutmeg, then mix in the cooled oat mixture.
- Sprinkle baking soda and salt over the mixture, then add the flour and combine.
- Pour the batter into the prepared baking dish and bake for about 30 minutes.
- While the cake is baking, prepare the topping by mixing melted butter, milk, vanilla, brown sugar, coconut, and pecans.
- Once the cake is cooked through, spread the topping over it and broil for 1-2 minutes until bubbly.
- Let the cake cool for at least 20 minutes before slicing and serving.
