Instructions
- Preheat the oven to 325°F and prepare an 8-inch square baking pan.
- In a small bowl, whisk together flour, baking powder, baking soda, cinnamon, and nutmeg.
- In another bowl, combine granola, chocolate, and coconut.
- In a stand mixer, beat the butter until creamy, then add sugars and mix well.
- Incorporate the egg, vanilla, and salt into the butter mixture.
- Gradually add the flour mixture until just combined, then fold in the granola mixture.
- Spread the batter into the prepared pan and smooth the top.
- Bake for 35 to 40 minutes until golden brown and a skewer comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a rack to cool completely.
