Granola Cake

Ingredients

  • 1 cup all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • a pinch freshly grated nutmeg
  • 1 cup granola
  • 4 ounces bittersweet, milk or white chocolate, finely chopped
  • ½ cup shredded coconut
  • 1 stick unsalted butter, at room temperature
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, at room temperature
  • 1 ½ teaspoons pure vanilla extract
  • ¼ teaspoon fine sea salt

Instructions

  1. Preheat the oven to 325°F and prepare an 8-inch square baking pan.
  2. In a small bowl, whisk together flour, baking powder, baking soda, cinnamon, and nutmeg.
  3. In another bowl, combine granola, chocolate, and coconut.
  4. In a stand mixer, beat the butter until creamy, then add sugars and mix well.
  5. Incorporate the egg, vanilla, and salt into the butter mixture.
  6. Gradually add the flour mixture until just combined, then fold in the granola mixture.
  7. Spread the batter into the prepared pan and smooth the top.
  8. Bake for 35 to 40 minutes until golden brown and a skewer comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a rack to cool completely.
