Sweet Potato Granola Cake

Instructions
- Preheat the oven to 356°F (180°C) and prepare an 18cm square tin with baking paper.
- Sift all dry ingredients except sugar together and set aside.
- Wash and chop the sweet potato into 1cm cubes, soak in water for 10 minutes, then microwave with 1 tbsp of sugar for 2 minutes.
- Add butter to the sweet potato and coat well, then set aside.
- In a large bowl, whisk the egg and 4 tbsp of sugar together, then add the oil and half of the milk, mixing well.
- Fold in half of the sifted dry ingredients, then add the remaining milk and the rest of the dry ingredients.
- Gently fold in 2/3 of the sweet potato and granola into the batter without overmixing.
- Pour the mixture into the prepared tin, topping with remaining sweet potato and granola, and sprinkle with black sesame seeds.
- Bake for about 20 minutes, checking with a skewer for doneness.
- Serve fresh or allow to cool.
