Sweet Potato Granola Cake

Ingredients

  • 1 cup purple sweet potato
  • 1 tbsp sugar
  • 10 g unsalted butter
  • 1 cup all purpose flour
  • ¼ tsp cinnamon
  • 1 tsp baking powder
  • 1 large egg
  • 4 tbsp sugar
  • 40 g sesame oil
  • 100 ml milk
  • 40 g granola
  • to taste sprinkle black sesame seeds

Instructions

  1. Preheat the oven to 356°F (180°C) and prepare an 18cm square tin with baking paper.
  2. Sift all dry ingredients except sugar together and set aside.
  3. Wash and chop the sweet potato into 1cm cubes, soak in water for 10 minutes, then microwave with 1 tbsp of sugar for 2 minutes.
  4. Add butter to the sweet potato and coat well, then set aside.
  5. In a large bowl, whisk the egg and 4 tbsp of sugar together, then add the oil and half of the milk, mixing well.
  6. Fold in half of the sifted dry ingredients, then add the remaining milk and the rest of the dry ingredients.
  7. Gently fold in 2/3 of the sweet potato and granola into the batter without overmixing.
  8. Pour the mixture into the prepared tin, topping with remaining sweet potato and granola, and sprinkle with black sesame seeds.
  9. Bake for about 20 minutes, checking with a skewer for doneness.
  10. Serve fresh or allow to cool.
