Spiced Vegan Sweet Potato Granola with Pecans

Ingredients

  • 4 cups rolled oats
  • cup mashed cooked sweet potato flesh
  • ½ cup coconut oil
  • cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • pinch ground nutmeg
  • pinch ground cloves
  • ½ teaspoon fine sea salt
  • 1 teaspoon vanilla extract
  • 1 cup pecan halves

Instructions

  1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
  2. Spread the rolled oats on the baking sheet and toast them for about 10 minutes until fragrant.
  3. Allow the oats to cool slightly.
  4. In a blender, combine the cooked sweet potato, coconut oil, maple syrup, spices, salt, and vanilla, and blend until creamy.
  5. Transfer the toasted oats to a mixing bowl, add the pecans and the blended mixture, and stir until evenly coated.
  6. Spread the mixture on the baking sheet, pressing it down to form an even layer.
  7. Bake for 35-40 minutes, stirring halfway through until golden brown.
  8. Let the granola cool for about an hour before storing in a jar.
