Instructions
- Preheat the oven to 300°F and line a baking sheet with parchment paper.
- Spread the rolled oats on the baking sheet and toast them for about 10 minutes until fragrant.
- Allow the oats to cool slightly.
- In a blender, combine the cooked sweet potato, coconut oil, maple syrup, spices, salt, and vanilla, and blend until creamy.
- Transfer the toasted oats to a mixing bowl, add the pecans and the blended mixture, and stir until evenly coated.
- Spread the mixture on the baking sheet, pressing it down to form an even layer.
- Bake for 35-40 minutes, stirring halfway through until golden brown.
- Let the granola cool for about an hour before storing in a jar.
