Sweet Potato Granola

Instructions
- Preheat the oven to 340°F (171°C).
- In a large bowl, mix the oats, nuts, cinnamon, sugar, and salt.
- In a small saucepan, warm the coconut oil, honey (or maple syrup), and sweet potato puree over medium-low heat, then whisk together.
- Pour the warm mixture over the dry ingredients and mix well with a large spoon.
- Spread the mixture evenly onto two baking sheets and bake for 20-25 minutes, stirring halfway through if you want a less chunky granola.
- Add the dried cranberries or other dried fruits in the last 5-10 minutes of baking.
- Once the granola is visibly browned, remove it from the oven and let it cool completely before transferring it to an airtight container.
