Sweet Potato Granola

Ingredients

The base

  • 3 cups rolled oats
  • 1 ½ cups raw nuts of choice (such as almonds or pecans)
  • 3 Tbsp sugar
  • ¼ tsp sea salt
  • ½ Tbsp ground cinnamon
  • ¼ cup coconut oil (melted)
  • cup honey (or maple syrup for vegan)
  • ½ cup sweet potato puree

The mix-ins

  • ¼ cup dried cranberries (or other dried fruit)

Instructions

  1. Preheat the oven to 340°F (171°C).
  2. In a large bowl, mix the oats, nuts, cinnamon, sugar, and salt.
  3. In a small saucepan, warm the coconut oil, honey (or maple syrup), and sweet potato puree over medium-low heat, then whisk together.
  4. Pour the warm mixture over the dry ingredients and mix well with a large spoon.
  5. Spread the mixture evenly onto two baking sheets and bake for 20-25 minutes, stirring halfway through if you want a less chunky granola.
  6. Add the dried cranberries or other dried fruits in the last 5-10 minutes of baking.
  7. Once the granola is visibly browned, remove it from the oven and let it cool completely before transferring it to an airtight container.
