Ingredients

  • ½ cup granulated sugar
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½-1 teaspoon nutmeg
  • 1 teaspoon ground allspice
  • ½-1 teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • 1 teaspoon salt

Finishing Touches

  • 4 ounces unsalted butter
  • 1 cup dried cranberries
  • to taste optional pecans

Instructions

  1. Prepare sweet potatoes by rinsing, peeling, and cutting them into chunks, then boil until tender.
  2. Drain and mash the sweet potatoes, then set aside.
  3. Preheat the oven to 350°F (170°C) and grease the loaf pans.
  4. In a bowl, mix the wet ingredients until smooth.
  5. In another bowl, combine the dry ingredients.
  6. Gradually mix the wet ingredients into the dry ingredients until combined.
  7. Incorporate softened butter into the batter.
  8. If using, stir in dried cranberries gently.
  9. Pour the batter into the prepared pans and top with pecans if desired.
  10. Bake for 55-65 minutes until a tester comes out clean, then cool before serving.
