Instructions
- Prepare sweet potatoes by rinsing, peeling, and cutting them into chunks, then boil until tender.
- Drain and mash the sweet potatoes, then set aside.
- Preheat the oven to 350°F (170°C) and grease the loaf pans.
- In a bowl, mix the wet ingredients until smooth.
- In another bowl, combine the dry ingredients.
- Gradually mix the wet ingredients into the dry ingredients until combined.
- Incorporate softened butter into the batter.
- If using, stir in dried cranberries gently.
- Pour the batter into the prepared pans and top with pecans if desired.
- Bake for 55-65 minutes until a tester comes out clean, then cool before serving.
