Vegan Sweet Potato Bread

Instructions
- Boil or microwave chopped sweet potato in water until tender, then mash and set aside.
- Preheat the oven to 350°F.
- Mix chia seeds, flax seeds, and plant-based milk in a bowl for 2 minutes.
- Add applesauce, mashed sweet potatoes, reserved cooking water, and oil to the mixture and combine well.
- Stir in coconut palm sugar, flour, nut meal, baking soda, salt, pumpkin pie spice, and walnuts until just blended.
- Spray a loaf pan with nonstick spray and pour the batter into the pan.
- Bake for about 1 hour and 25 minutes until cooked through.
- Allow to cool slightly before removing from the pan and slicing.
