Sweet Potato Chocolate Chip Banana Bread

Instructions
- Preheat the oven to 425°F.
- Wash and scrub the sweet potato, poke holes in it, wrap in foil, and bake for 45-50 minutes.
- In a large bowl, mix gluten free flour, baking soda, baking powder, and salt, then set aside.
- Once the sweet potato is done, blend it with the banana, melted coconut oil, and maple syrup until smooth.
- Pour the blended mixture into the bowl with the flour mixture and fold in ¼ cup of chocolate chips, mixing until it forms a dough.
- Reduce the oven temperature to 350°F.
- Line a loaf pan with parchment paper (grease the pan first) and pour the batter into it, pressing down with your hands.
- Top with remaining chocolate chips and bake for 25 minutes.
