Sweet Potato Chocolate Chip Banana Bread

Ingredients

  • 1 medium sweet potato
  • 1 large very ripe banana
  • 1 ½ cups gluten free flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup melted coconut oil
  • 2 tbsp maple syrup
  • ¾ cup dairy free chocolate chips

Instructions

  1. Preheat the oven to 425°F.
  2. Wash and scrub the sweet potato, poke holes in it, wrap in foil, and bake for 45-50 minutes.
  3. In a large bowl, mix gluten free flour, baking soda, baking powder, and salt, then set aside.
  4. Once the sweet potato is done, blend it with the banana, melted coconut oil, and maple syrup until smooth.
  5. Pour the blended mixture into the bowl with the flour mixture and fold in ¼ cup of chocolate chips, mixing until it forms a dough.
  6. Reduce the oven temperature to 350°F.
  7. Line a loaf pan with parchment paper (grease the pan first) and pour the batter into it, pressing down with your hands.
  8. Top with remaining chocolate chips and bake for 25 minutes.
