Ingredients

Wet Ingredients

  • cups cooked and cooled sweet potatoes
  • 2 units eggs (or 2 flax eggs)
  • ½ cup coconut oil, melted
  • ½ cup unsweetened applesauce
  • ¼ cup unsweetened almond milk
  • 1 teaspoon vanilla extract

Dry Ingredients

  • cups gluten-free baking flour
  • cups white sugar or coconut sugar
  • 2 teaspoons baking soda
  • 1 tablespoon ground cinnamon
  • ¼ teaspoon sea salt

Instructions

  1. Preheat the oven to 375°F and prepare a loaf pan with nonstick spray.
  2. In a medium bowl, mix the sweet potatoes, eggs, coconut oil, applesauce, almond milk, and vanilla.
  3. In a large bowl, combine the gluten-free flour, sugar, baking soda, cinnamon, and salt.
  4. Add the wet mixture to the dry ingredients and stir until combined, then pour into the loaf pan.
  5. Bake for 55-60 minutes until golden brown on top.
  6. Allow the bread to cool in the pan for 10 minutes before transferring to a cooling rack to cool completely.
