Instructions
- Preheat the oven to 375°F and prepare a loaf pan with nonstick spray.
- In a medium bowl, mix the sweet potatoes, eggs, coconut oil, applesauce, almond milk, and vanilla.
- In a large bowl, combine the gluten-free flour, sugar, baking soda, cinnamon, and salt.
- Add the wet mixture to the dry ingredients and stir until combined, then pour into the loaf pan.
- Bake for 55-60 minutes until golden brown on top.
- Allow the bread to cool in the pan for 10 minutes before transferring to a cooling rack to cool completely.
