Instructions
- Preheat the oven to 400°F and roast the sweet potato until fork-tender.
- Allow the sweet potato to cool, then peel and mash it to measure 1 cup of puree.
- Reduce the oven temperature to 350°F and prepare a baking sheet with parchment paper.
- In a bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, cloves, coriander, and salt.
- In another bowl, beat the eggs and brown sugar until thick, then mix in the oil, applesauce, and vanilla.
- Fold the sweet potato puree into the wet mixture, then combine with the dry ingredients until just mixed.
- Gently fold in the chocolate chips.
- Drop tablespoonfuls of dough onto the baking sheet and bake for 9-11 minutes until a toothpick comes out clean.
- Let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack.
