Sweet Potato Cookies

Ingredients

  • 1 medium sweet potato (about 8 ounces)
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground coriander
  • ¼ teaspoon kosher salt
  • 2 large eggs (room temperature)
  • 1 cup light brown sugar (lightly packed)
  • ¼ cup canola oil
  • ¼ cup unsweetened applesauce
  • 2 teaspoons pure vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 400°F and roast the sweet potato until fork-tender.
  2. Allow the sweet potato to cool, then peel and mash it to measure 1 cup of puree.
  3. Reduce the oven temperature to 350°F and prepare a baking sheet with parchment paper.
  4. In a bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, cloves, coriander, and salt.
  5. In another bowl, beat the eggs and brown sugar until thick, then mix in the oil, applesauce, and vanilla.
  6. Fold the sweet potato puree into the wet mixture, then combine with the dry ingredients until just mixed.
  7. Gently fold in the chocolate chips.
  8. Drop tablespoonfuls of dough onto the baking sheet and bake for 9-11 minutes until a toothpick comes out clean.
  9. Let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack.
