Sweet Potato Biscuits

Instructions
- 1. Preheat the oven to 400°F.
- 2. Cook the sweet potatoes by roasting for 45-55 minutes or microwaving for about 10 minutes until soft.
- 3. Peel the potatoes and process them in a food processor until smooth, leaving 1 cup in the processor for the recipe.
- 4. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
- 5. Add the flour mixture to the food processor and pulse until it begins to bind.
- 6. Add butter to the food processor and pulse for 30 seconds.
- 7. Add milk and pulse until the dough is moist.
- 8. Dust a piece of parchment paper with flour, place the dough on top, and roll it to about ¾ inch thickness.
- 9. Cut shapes with cookie cutters or a glass.
- 10. Place biscuits on a parchment-lined baking sheet and bake for 15 minutes or until golden brown.
