Ingredients

  • 2 medium sweet potatoes
  • 2 ¼ cups whole wheat flour (or white whole wheat flour + more for rolling)
  • 2 teaspoons baking powder
  • ½ teaspoon sea salt
  • ½ teaspoon cinnamon (ground)
  • 5 tablespoons butter (unsalted, chilled and cut into small pieces)
  • cup milk

Instructions

  1. 1. Preheat the oven to 400°F.
  2. 2. Cook the sweet potatoes by roasting for 45-55 minutes or microwaving for about 10 minutes until soft.
  3. 3. Peel the potatoes and process them in a food processor until smooth, leaving 1 cup in the processor for the recipe.
  4. 4. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
  5. 5. Add the flour mixture to the food processor and pulse until it begins to bind.
  6. 6. Add butter to the food processor and pulse for 30 seconds.
  7. 7. Add milk and pulse until the dough is moist.
  8. 8. Dust a piece of parchment paper with flour, place the dough on top, and roll it to about ¾ inch thickness.
  9. 9. Cut shapes with cookie cutters or a glass.
  10. 10. Place biscuits on a parchment-lined baking sheet and bake for 15 minutes or until golden brown.
