Ingredients

  • ½ cup cooked mashed sweet potato
  • 1 egg egg
  • 1 tablespoon water

Optional Honey Butter

  • 4 teaspoons butter
  • teaspoons honey

Instructions

  1. Combine flour, baking powder, sweetener, cinnamon, and salt in a bowl.
  2. Add Greek yogurt, mashed sweet potatoes, and butter to the bowl.
  3. Use a fork to mix the ingredients, ensuring not to over-mix.
  4. Spread the dough on a floured surface and roll it out to 7x7 inches and ½ inch thick.
  5. Cut out biscuits using a biscuit cutter or your preferred shape.
  6. For the egg wash, beat the egg with water and brush the mixture on top of each biscuit.
  7. Air fry the biscuits at 300°F for 4 minutes, then increase to 400°F for 2-5 minutes until golden brown.
  8. Alternatively, preheat the oven to 375°F and bake the biscuits for 15-20 minutes until golden brown.
