Ingredients

  • 2 ¼ cups all-purpose flour

  • 1 teaspoon salt
  • 2 cloves garlic, minced
  • tablespoons chopped fresh rosemary
  • 6 tablespoons cold unsalted butter, cut into cubes
  • 1 cup diced roasted sweet potatoes
  • 1 cup buttermilk
  • 3 tablespoons butter, melted

Instructions

  1. Preheat the oven to 450°F and prepare a baking sheet with parchment paper.
  2. In a large bowl, mix together the flour, baking powder, sugar, baking soda, and salt. Add minced garlic and rosemary.
  3. Incorporate the cold butter until the mixture resembles coarse meal. Add the roasted sweet potatoes and gently mix.
  4. Pour the buttermilk over the mixture and stir until just combined.
  5. Drop spoonfuls of dough onto the baking sheet and brush with melted butter.
  6. Bake for 15-17 minutes until golden brown, then serve warm.
