Sweet Potato Biscuits

Instructions
- Preheat the oven to 400°F and roast the sweet potato for 45 minutes to 1 hour until tender.
- Mash the roasted sweet potato and measure out ¾ cup.
- Adjust the oven temperature to 425°F and line a baking sheet with parchment paper.
- In a mixing bowl, combine flour, baking powder, and salt, then add sliced butter and cut into pea-sized pieces.
- Add the milk and sweet potato puree, mixing until just combined.
- Turn the dough onto a floured surface and gently press to ½ inch thickness, folding it over 4-5 times.
- Cut out biscuit shapes and place them on the prepared baking sheet.
- Bake for 12-15 minutes until golden and fluffy, then serve immediately.
