Ingredients

  • ¾ cup mashed sweet potato
  • cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon table salt
  • 6 tablespoons unsalted butter
  • cup milk

Instructions

  1. Preheat the oven to 400°F and roast the sweet potato for 45 minutes to 1 hour until tender.
  2. Mash the roasted sweet potato and measure out ¾ cup.
  3. Adjust the oven temperature to 425°F and line a baking sheet with parchment paper.
  4. In a mixing bowl, combine flour, baking powder, and salt, then add sliced butter and cut into pea-sized pieces.
  5. Add the milk and sweet potato puree, mixing until just combined.
  6. Turn the dough onto a floured surface and gently press to ½ inch thickness, folding it over 4-5 times.
  7. Cut out biscuit shapes and place them on the prepared baking sheet.
  8. Bake for 12-15 minutes until golden and fluffy, then serve immediately.
