Cake Batter Granola

Ingredients

  • 4 cups rolled oats
  • 1 cup sliced almonds
  • ½ cup melted coconut oil
  • ½ cup honey
  • cup coconut sugar
  • 1 tsp almond extract
  • ½ tsp salt
  • ½ cup sprinkles

Instructions

  1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix the rolled oats and sliced almonds.
  3. In a smaller bowl, whisk together the melted coconut oil, honey, coconut sugar, almond extract, and salt.
  4. Combine the wet ingredients with the dry ingredients and stir until all oats are coated.
  5. Add sprinkles and mix well, using your hands if necessary.
  6. Spread the mixture evenly on the baking sheet and press down lightly.
  7. Bake for 23-25 minutes or until golden brown.
  8. Allow to cool completely for at least 30 minutes before breaking into clusters.
