Seafood Pasta Salad

Ingredients

The pasta and vegetables

  • 1 pound penne pasta
  • 1 cup broccoli florets
  • 1 package (8 or 10 ounces) grape tomatoes
  • ½ cup red bell pepper
  • ½ cup scallions

The dressing and cheese

  • ½ cup mayonnaise
  • ¼ cup Italian salad dressing
  • 2 tablespoons freshly grated Parmesan cheese

The seafood

  • 1 ½ cups cooked shrimp, crab, and/or lobster

Instructions

  1. Boil 4 quarts of water with 1 tablespoon of salt and cook the pasta until al dente, then drain and rinse with cold water.
  2. In another pot, boil 2 quarts of water with 1 teaspoon of salt and blanch the broccoli for about 3 minutes, then transfer to ice water and drain.
  3. In a large bowl, whisk together the mayonnaise, Italian dressing, and Parmesan cheese.
  4. Add the cooked pasta, tomatoes, bell pepper, and scallions to the dressing mixture and stir well.
  5. Gently fold in the seafood until everything is evenly coated, then cover and chill until serving.
