Whole Roasted Cauliflower

The cauliflower

cauliflower head (about 2 pounds)
The seasoning

extra virgin olive oil or melted ghee

Diamond Crystal kosher salt
Instructions
- Preheat the oven to 375°F and prepare a rack in the middle position.
- Trim the leaves and core from the cauliflower, keeping the head intact.
- Rinse and pat dry the cauliflower, then drizzle with olive oil or melted ghee.
- Rub the oil over the entire surface of the cauliflower.
- Liberally sprinkle salt on both sides of the cauliflower.
- Place the cauliflower florets-side up in a cast iron skillet and cover with aluminum foil.
- Cook in the oven for 30 minutes covered.
- Remove the foil and roast for an additional hour until golden brown and tender.
- Transfer to a platter and serve as-is or with your favorite sauce and herbs.
