Ingredients

The cauliflower

  • 1 whole cauliflower head (about 2 pounds)

The seasoning

  • ½ cup extra virgin olive oil or melted ghee
  • to taste Diamond Crystal kosher salt

Instructions

  1. Preheat the oven to 375°F and prepare a rack in the middle position.
  2. Trim the leaves and core from the cauliflower, keeping the head intact.
  3. Rinse and pat dry the cauliflower, then drizzle with olive oil or melted ghee.
  4. Rub the oil over the entire surface of the cauliflower.
  5. Liberally sprinkle salt on both sides of the cauliflower.
  6. Place the cauliflower florets-side up in a cast iron skillet and cover with aluminum foil.
  7. Cook in the oven for 30 minutes covered.
  8. Remove the foil and roast for an additional hour until golden brown and tender.
  9. Transfer to a platter and serve as-is or with your favorite sauce and herbs.
