Whole Roasted Cauliflower

Instructions
- Preheat the oven to 400ºF and adjust the oven rack to a low setting.
- Trim the bottom of the cauliflower to ensure it stands evenly.
- Remove any leaves from the bottom and rinse the cauliflower well, then pat it dry.
- Mix together olive oil, salt, garlic powder, lemon juice, and black pepper in a small bowl.
- Brush the bottom of the cauliflower with half of the olive oil mixture, then shake to distribute the seasoning.
- Flip the cauliflower and brush the outside with the remaining mixture.
- Pour 1/4 cup of water into the pan and roast the cauliflower for 60 minutes.
- Check the tenderness of the cauliflower; if needed, return it to the oven for an additional 15 minutes.
- Once tender, let it cool for 10 minutes, then season with additional salt and pepper if desired.
- Slice into wedges and serve warm.
