Whole Roasted Cauliflower

Ingredients

The cauliflower

  • 1 whole head cauliflower

The seasoning

  • 3 to 4 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon juice
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 400ºF and adjust the oven rack to a low setting.
  2. Trim the bottom of the cauliflower to ensure it stands evenly.
  3. Remove any leaves from the bottom and rinse the cauliflower well, then pat it dry.
  4. Mix together olive oil, salt, garlic powder, lemon juice, and black pepper in a small bowl.
  5. Brush the bottom of the cauliflower with half of the olive oil mixture, then shake to distribute the seasoning.
  6. Flip the cauliflower and brush the outside with the remaining mixture.
  7. Pour 1/4 cup of water into the pan and roast the cauliflower for 60 minutes.
  8. Check the tenderness of the cauliflower; if needed, return it to the oven for an additional 15 minutes.
  9. Once tender, let it cool for 10 minutes, then season with additional salt and pepper if desired.
  10. Slice into wedges and serve warm.
