Whole Roasted Cauliflower

The cauliflower

The seasoning

garlic powder

lemon juice

Instructions
- Preheat the oven to 400ºF and adjust the oven rack to a low setting.
- Trim the bottom of the cauliflower and rinse it well, then pat it dry.
- In a small bowl, mix olive oil, salt, garlic powder, lemon juice, and black pepper.
- Brush the bottom of the cauliflower with half of the olive oil mixture, then brush the outside with the remaining mixture.
- Pour ¼ cup of water into the bottom of the pan and place the cauliflower in it.
- Roast the cauliflower for 60 minutes, checking for tenderness.
- If needed, return to the oven for an additional 15 minutes.
- Let the cauliflower cool for 10 minutes before slicing into wedges and serving.
