Whole Roasted Cauliflower

Ingredients

The cauliflower

  • 1 head cauliflower (2 to 3 pounds)

The seasoning

  • 3 to 4 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon juice
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 400ºF and adjust the oven rack to a low setting.
  2. Trim the bottom of the cauliflower and rinse it well, then pat it dry.
  3. In a small bowl, mix olive oil, salt, garlic powder, lemon juice, and black pepper.
  4. Brush the bottom of the cauliflower with half of the olive oil mixture, then brush the outside with the remaining mixture.
  5. Pour ¼ cup of water into the bottom of the pan and place the cauliflower in it.
  6. Roast the cauliflower for 60 minutes, checking for tenderness.
  7. If needed, return to the oven for an additional 15 minutes.
  8. Let the cauliflower cool for 10 minutes before slicing into wedges and serving.
