Ingredients

The salad

  • 3 cups Tomatoes (cut into small wedges)
  • 2 cups Cucumber (sliced into half moons)
  • ½ medium Red onion (sliced into thin quarter moons)
  • 1 tbsp Fresh dill (chopped)
  • 1 tbsp Fresh parsley (chopped)

The dressing

  • 3 tbsp Extra virgin olive oil
  • 2 tbsp Red wine vinegar
  • 1 tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. Combine chopped tomatoes, cucumbers, red onions, and fresh herbs in a large bowl.
  2. In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
  3. Pour the dressing over the salad and mix to coat.
