Ingredients

The pizza base

  • 1 pound pizza dough
  • 1 cup cornmeal

The sauce and cheese

  • cup pizza sauce
  • ½ cup shredded Asiago cheese
  • ½ cup shredded pecorino cheese
  • 1 cup shredded low-moisture part-skim mozzarella cheese

The toppings

  • ½ small red onion
  • 2 pieces jarred roasted red peppers
  • 1 14-ounce can artichoke hearts
  • 1 piece jalapeño pepper
  • 1 tablespoon extra-virgin olive oil
  • to taste red pepper flakes
  • to taste fresh basil leaves

Instructions

  1. Prepare the pizza dough, letting it sit at room temperature for 1 hour if using store-bought.
  2. Preheat the oven to 500°F (or as high as your oven goes). Sprinkle cornmeal on a baking sheet.
  3. Stretch the dough into a large oval on the baking sheet.
  4. Mix the mozzarella, Asiago, and pecorino cheeses in a small bowl.
  5. Spread the pizza sauce on the dough, then add the cheese mixture, onions, red peppers, artichokes, and jalapeño.
  6. Drizzle with olive oil and bake for 10 to 13 minutes until the crust is browned and cheese is melted.
  7. Remove from the oven, sprinkle with red pepper flakes and fresh basil, then slice and serve.
