Easy Turkey & Stuffing Casserole

Ingredients

The stuffing

  • 6 oz bacon
  • ½ bunch celery
  • 2 medium apples
  • 1 medium yellow onion
  • ½ tsp minced garlic
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • to taste salt and pepper
  • 1 large loaf french bread
  • 1 tsp chicken base
  • ½ bunch fresh parsley
  • 2 Tbsp olive oil

The turkey

  • 6 lbs bone-in turkey pieces

Instructions

  1. Cut the bacon into small pieces and cook in a large pot until crispy.
  2. While the bacon cooks, wash and dice the celery, onion, and apples.
  3. Add the diced vegetables and garlic to the cooked bacon and sauté until slightly softened.
  4. Turn off the heat and mix in thyme, sage, salt, and pepper.
  5. Preheat the oven to 350°F and prepare the bread by drying it out in the oven or letting it stale.
  6. Cut the dried bread into small cubes and chop the parsley.
  7. Combine the bread cubes and parsley with the cooked bacon and vegetables.
  8. Mix the chicken base with hot water and pour over the stuffing mixture, stirring to coat.
  9. Transfer the stuffing to a large casserole dish.
  10. Prepare the turkey pieces by rubbing them with olive oil and seasoning with salt and pepper.
  11. Arrange the turkey over the stuffing in the casserole dish.
  12. Bake uncovered for about 1.5 hours until the turkey skin is crispy and the stuffing is bubbling.
  13. Let the casserole rest for 10 minutes before serving.
