Ingredients

The salad

  • 1 large chicken breast
  • 2 stalks celery
  • ¼ cup dried cranberries

The dressing

  • ¼ cup mayonnaise
  • Tbsp honey
  • 1 Tbsp dijon mustard
  • ½ tsp apple cider vinegar
  • ¼ tsp salt
  • tsp garlic powder
  • tsp paprika

Instructions

  1. Prepare the dressing by mixing mayonnaise, honey, dijon mustard, apple cider vinegar, salt, garlic powder, and paprika; refrigerate.
  2. Cut the chicken breast into 1 to 2 inch pieces and cook in a skillet over medium heat until golden brown and cooked through (7-10 minutes). Allow to cool.
  3. Chop the cranberries and celery into small pieces and place in a large bowl.
  4. Once the chicken is cool, chop it into small pieces and add to the bowl with cranberries and celery.
  5. Add the dressing to the bowl and mix until everything is well combined. Serve immediately or refrigerate until ready to eat.
