Chocolate Dipped Cranberry Cookies

Instructions
- Preheat the oven to 350°F and line baking sheets with silicone mats or parchment paper.
- In a bowl, whisk together the flour, baking soda, salt, and cream of tartar.
- In a stand mixer, cream together the sugar, butter, and orange zest until well blended.
- Mix in the egg, egg yolk, food coloring, and vanilla extract.
- Gradually add the flour mixture and mix until nearly combined, then fold in the cranberries.
- Scoop the dough into 2 Tbsp balls and space them 2 inches apart on the baking sheets.
- Flatten the cookies slightly and bake for 9 to 11 minutes until slightly under-baked.
- Let the cookies cool on the pan for a few minutes before transferring them to a wire rack to cool completely.
- Melt the chocolate in a bowl using a microwave in 20-second increments, stirring in between.
- Once cooled, dip half of each cookie in the melted chocolate, shake off excess, and place on parchment paper.
- Sprinkle with walnuts if desired and refrigerate until the chocolate sets.
