Chocolate Dipped Cranberry Cookies

Ingredients

The cookie dough

  • 2 1/3 cups all-purpose flour
  • ¾ tsp baking soda
  • ½ tsp salt
  • ½ tsp cream of tartar
  • 1 ¼ cups granulated sugar
  • 1 cup unsalted butter
  • 1 tsp orange zest
  • 1 large egg
  • 1 large egg yolk
  • 12-15 drops red food coloring (optional)
  • 1 tsp vanilla extract
  • 1 ⅓ cups cherry flavor dried cranberries, chopped

The chocolate coating

  • 12 oz chopped semi-sweet chocolate

Optional toppings

  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F and line baking sheets with silicone mats or parchment paper.
  2. In a bowl, whisk together the flour, baking soda, salt, and cream of tartar.
  3. In a stand mixer, cream together the sugar, butter, and orange zest until well blended.
  4. Mix in the egg, egg yolk, food coloring, and vanilla extract.
  5. Gradually add the flour mixture and mix until nearly combined, then fold in the cranberries.
  6. Scoop the dough into 2 Tbsp balls and space them 2 inches apart on the baking sheets.
  7. Flatten the cookies slightly and bake for 9 to 11 minutes until slightly under-baked.
  8. Let the cookies cool on the pan for a few minutes before transferring them to a wire rack to cool completely.
  9. Melt the chocolate in a bowl using a microwave in 20-second increments, stirring in between.
  10. Once cooled, dip half of each cookie in the melted chocolate, shake off excess, and place on parchment paper.
  11. Sprinkle with walnuts if desired and refrigerate until the chocolate sets.
