Sweet & Sour Citrus Chicken Stir-Fry

Ingredients

The sauce

  • cup orange juice
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 3 tablespoons soy sauce
  • 5 cloves garlic, minced
  • 2 teaspoons fresh ginger, minced or grated
  • 2 tablespoons juice and grated rind of 1 lime

The stir-fry

  • 1 pound boneless skinless chicken breasts, cut into 1" chunks
  • to taste salt and pepper
  • 3 tablespoons corn starch
  • cups broccoli florets
  • cups green beans
  • 1 red, yellow, or orange bell pepper, seeded and sliced
  • 1 small or medium red onion, halved and cut into ¼" slices

Instructions

  1. Whisk together the sauce ingredients in a large skillet and bring to a boil over medium-high heat, cooking for 5 minutes.
  2. Remove from heat and pour the sauce into a heat-safe bowl, then rinse out the skillet and dry it.
  3. Season the chicken with salt and pepper, then sprinkle with corn starch and rub it in.
  4. Heat about 1 tablespoon of oil in the skillet over medium-high heat, then add the seasoned chicken and stir-fry until cooked through, about 4-5 minutes.
  5. Add the onions and other vegetables to the skillet and stir-fry until tender-crisp.
  6. Gradually add the sauce to the stir-fry, allowing it to bubble before adding more.
  7. Serve immediately over hot rice.
