Sweet & Sour Citrus Chicken Stir-Fry

The stir-fry

boneless skinless chicken breasts, cut into 1" chunks

red, yellow, or orange bell pepper, seeded and sliced

red onion, halved and cut into ¼" slices
Instructions
- Whisk together the sauce ingredients in a large skillet and bring to a boil over medium-high heat, cooking for 5 minutes.
- Remove from heat and pour the sauce into a heat-safe bowl, then rinse out the skillet and dry it.
- Season the chicken with salt and pepper, then sprinkle with corn starch and rub it in.
- Heat about 1 tablespoon of oil in the skillet over medium-high heat, then add the seasoned chicken and stir-fry until cooked through, about 4-5 minutes.
- Add the onions and other vegetables to the skillet and stir-fry until tender-crisp.
- Gradually add the sauce to the stir-fry, allowing it to bubble before adding more.
- Serve immediately over hot rice.
