Instructions
- Cook the brown rice according to your preferred method, using vegetable broth.
- Wash and trim the brussels sprouts, then separate the leaves.
- In a skillet, heat olive oil and sauté the brussels sprout leaves with minced garlic, salt, and pepper for 1 to 2 minutes.
- In a large bowl, combine the sautéed brussels sprouts, warm brown rice, candied walnuts, and lemon juice and zest. Adjust seasoning as needed.
