Brussels Sprout and Brown Rice Salad

Ingredients

  • 4 cups brussels sprout leaves
  • 1 cup uncooked brown rice
  • 1 ¾ cups vegetable broth
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 juice of lemon
  • 1/4 cup candied maple walnuts

Instructions

  1. Cook the brown rice according to your preferred method, using vegetable broth.
  2. Wash and trim the brussels sprouts, then separate the leaves.
  3. In a skillet, heat olive oil and sauté the brussels sprout leaves with minced garlic, salt, and pepper for 1 to 2 minutes.
  4. In a large bowl, combine the sautéed brussels sprouts, warm brown rice, candied walnuts, and lemon juice and zest. Adjust seasoning as needed.
