Instructions
- 1. Preheat the oven to 325°F and grease an 8x8 inch baking dish.
- 2. In a large bowl, combine the oats, spelt flour, quinoa, coconut, sugar, salt, baking soda, and cinnamon.
- 3. Add the maple syrup, applesauce, coconut oil, and vanilla to the dry ingredients and stir until combined.
- 4. Set aside ½ cup of the oat mixture and press the rest into the prepared pan.
- 5. Spread the strawberry jam evenly over the mixture in the pan.
- 6. Sprinkle the reserved oat mixture on top.
- 7. Bake for 35 minutes and then cool completely on a wire rack before cutting into bars.
