Ingredients

The base

  • 1 cup old-fashioned oats
  • 1 cup spelt or whole wheat flour
  • ¾ cup cooked quinoa
  • cup unsweetened shredded coconut
  • 2 tbsp coconut sugar
  • ¼ tsp salt
  • ¼ tsp baking soda
  • ¼ tsp cinnamon
  • ¼ cup pure maple syrup
  • ½ cup unsweetened applesauce
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract

The topping

  • ½ cup strawberry jam

Instructions

  1. 1. Preheat the oven to 325°F and grease an 8x8 inch baking dish.
  2. 2. In a large bowl, combine the oats, spelt flour, quinoa, coconut, sugar, salt, baking soda, and cinnamon.
  3. 3. Add the maple syrup, applesauce, coconut oil, and vanilla to the dry ingredients and stir until combined.
  4. 4. Set aside ½ cup of the oat mixture and press the rest into the prepared pan.
  5. 5. Spread the strawberry jam evenly over the mixture in the pan.
  6. 6. Sprinkle the reserved oat mixture on top.
  7. 7. Bake for 35 minutes and then cool completely on a wire rack before cutting into bars.
