Instructions
- Prepare a 9 x 13 baking pan with foil or parchment paper and spray with non-stick spray.
- Preheat the oven to 325°F.
- Cook quinoa with water in a saucepan until boiling, then reduce heat and simmer until liquid is absorbed.
- Let the quinoa stand covered for a few minutes, then fluff with a fork and cool.
- In a large bowl, mix oats, cinnamon, baking soda, and salt.
- Combine mashed bananas, egg, honey, coconut oil, and vanilla with the cooled quinoa.
- Stir the banana mixture into the oats mixture until just blended.
- Fold in dried cherries, walnuts, and chocolate chips.
- Spread the mixture evenly in the prepared pan and bake until golden brown.
- Cool completely on a wire rack, then refrigerate before cutting into bars.
