Banana Split Quinoa Oat Bars

Ingredients

The base

  • cup quinoa
  • ½ cup water
  • 2 cups quick rolled oats
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • cups very ripe mashed bananas
  • 1 large egg
  • ¼ cup raw honey
  • 1 tablespoon virgin coconut oil
  • 2 teaspoons vanilla extract

The mix-ins

  • ½ cup dried cherries
  • cup chopped toasted walnuts or pecans
  • ¼ cup mini semi-sweet chocolate chips

Instructions

  1. Prepare a 9 x 13 baking pan with foil or parchment paper and spray with non-stick spray.
  2. Preheat the oven to 325°F.
  3. Cook quinoa with water in a saucepan until boiling, then reduce heat and simmer until liquid is absorbed.
  4. Let the quinoa stand covered for a few minutes, then fluff with a fork and cool.
  5. In a large bowl, mix oats, cinnamon, baking soda, and salt.
  6. Combine mashed bananas, egg, honey, coconut oil, and vanilla with the cooled quinoa.
  7. Stir the banana mixture into the oats mixture until just blended.
  8. Fold in dried cherries, walnuts, and chocolate chips.
  9. Spread the mixture evenly in the prepared pan and bake until golden brown.
  10. Cool completely on a wire rack, then refrigerate before cutting into bars.
