Coconut Honey Lime Filipino Chicken Adobo Skewers

The chicken and marinade

Instructions
- Combine chicken in a bowl or bag with marinade ingredients and refrigerate for at least 1 hour or overnight.
- Preheat the grill to medium-high heat and oil the grates.
- Thread the marinated chicken onto skewers.
- Grill the chicken for about 5-10 minutes on each side until cooked through.
- While grilling, simmer the reserved marinade in a saucepan until reduced to a sauce.
- Serve the chicken with the sauce and coconut rice.
