Ingredients

The chicken and marinade

  • 2 pounds skinless chicken thighs or breasts, cut into bite-size cubes
  • ¾ cup soy sauce
  • cup canned coconut milk
  • 2 limes juice of
  • ¼ cup rice vinegar
  • ¼ cup honey
  • 4 cloves garlic, minced or grated
  • 3 leaves bay
  • 2 teaspoons fresh ginger, grated
  • ½ teaspoon black peppercorns

For serving

  • coconut rice

Instructions

  1. Combine chicken in a bowl or bag with marinade ingredients and refrigerate for at least 1 hour or overnight.
  2. Preheat the grill to medium-high heat and oil the grates.
  3. Thread the marinated chicken onto skewers.
  4. Grill the chicken for about 5-10 minutes on each side until cooked through.
  5. While grilling, simmer the reserved marinade in a saucepan until reduced to a sauce.
  6. Serve the chicken with the sauce and coconut rice.
