Big Cluster Peanut Butter Granola

Ingredients

The granola mixture

  • 3 ½ cups rolled oats
  • 1 cup salted or honey roasted peanuts (chopped if desired)
  • ¾ cup whole wheat flour
  • 2 tablespoons whole wheat flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt

The wet mixture

  • ¾ cup natural peanut butter
  • ¼ cup canola oil
  • cup real maple syrup
  • 2 teaspoons vanilla
  • ¼ cup milk (vanilla almond milk recommended)

Instructions

  1. Preheat the oven to 275°F.
  2. In a large bowl, mix the oats, peanuts, flour, baking powder, and salt.
  3. In another bowl, whisk together the peanut butter, canola oil, maple syrup, vanilla, and milk until smooth.
  4. Pour the wet mixture over the oat mixture and stir to combine.
  5. Line a large jelly roll pan with parchment paper and spread the granola mixture evenly on it.
  6. Bake for 15 minutes, stir, then bake for another 15 minutes until golden brown and dry to the touch.
  7. Let the granola cool for 2-3 hours to cluster and crunchify before serving.
