Ingredients

The noodles

  • 10.5 ounces rice noodles or gluten free spaghetti

The sauce and seasonings

  • 1 Tablespoon sesame oil
  • ½ to ⅔ cup sweet and sour sauce
  • Sea salt and pepper to taste

The vegetables

  • cup sliced red onion
  • 1 bell pepper sliced
  • 1 sliced green onion (for garnish)
  • ½ cup chopped fresh cilantro

The protein

  • 8 ounces diced cooked ham or cooked protein of choice

Optional ingredients

  • ½ cup diced pineapple
  • Crushed red pepper flakes for garnish

Instructions

  1. Cook the noodles al dente according to package directions, then rinse under cold water and set aside.
  2. Heat sesame oil in a large skillet over medium-high heat, add red onion, and sauté for 2 minutes until fragrant.
  3. Add bell pepper slices and sauté for an additional minute until slightly cooked.
  4. Add the cooked noodles to the skillet and toss to combine, adding more oil if needed.
  5. Mix in the sweet and sour sauce and the cooked protein, tossing until well coated and heated through.
  6. If using, add diced pineapple and cook for 2-3 minutes until everything is evenly coated.
  7. Garnish with green onion, cilantro, and red pepper flakes, then serve immediately.
