Bacon, Corn and Tomato Flatbread

Ingredients

The flatbread

  • 1 piece lavash flatbread

The toppings

  • 2 slices center cut bacon
  • ½ cup frozen corn kernels
  • 1 clove garlic, minced
  • 2 wedges Creamy Spicy Pepper Jack Laughing Cow Cheese
  • 5 pieces cherry tomatoes, chopped
  • 1 teaspoon chopped fresh chives
  • to taste salt and black pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Cook the bacon until crispy, then drain and crumble it.
  3. Mist a skillet with cooking spray, heat it, and cook the corn for about a minute.
  4. Add salt, pepper, and minced garlic to the corn and cook for another minute, then remove from heat.
  5. Place the flatbread in the oven for about 4 minutes until firm.
  6. Spread the cheese wedges on the flatbread, then layer with corn, bacon, and tomatoes.
  7. Return to the oven and bake for another 4-5 minutes until the edges are browned.
  8. Sprinkle chives on top, slice, and serve immediately.
