Ingredients

  • 6 pieces hard-boiled eggs, peeled and chopped
  • 3 strips bacon, cooked to crisp & chopped
  • cup sliced grape tomatoes
  • ¼ cup finely diced celery
  • 3 Tbsp finely diced red onion
  • 3 Tbsp fresh chives, chopped
  • ¼–⅓ cup mayo
  • to taste salt & pepper
  • as needed butter lettuce or leaf lettuce

Instructions

  1. Combine all ingredients in a bowl.
  2. Stir gently to mix and season with salt and pepper to taste.
  3. Serve the egg salad tucked in a lettuce leaf or on top of salad greens, garnished with fresh chives and bacon bits.
