Avocado-Egg BLT

Ingredients

  • 1 slice whole grain bread
  • 2 tablespoons mashed ripe avocado
  • 1/8 teaspoon bottled minced garlic (optional)
  • 2 slices cooked bacon
  • a few slices red onion
  • 1 handful greens or lettuce leaf
  • 2-3 slices tomato
  • 1 hard boiled egg
  • to taste kosher salt and fresh cracked pepper
  • to taste Garlic Olive Oil (optional)

Instructions

  1. Toast the bread.
  2. Mash the avocado with garlic and spread it on the toasted bread.
  3. Layer the bacon and onion slices on top of the avocado.
  4. Add greens, sliced tomato, and the hard-boiled egg on top.
  5. Sprinkle with salt and pepper, and drizzle with olive oil if desired.
