BLT Chicken Salad Lettuce Wraps

Ingredients

The salad

  • 3 cups cubed cooked chicken
  • 4 strips no sugar bacon, cooked to crisp & chopped
  • cup diced red onion
  • ½ cup sliced grape tomatoes
  • 3 Tbsp. chives, chopped
  • ⅓–½ cup mayonnaise
  • to taste salt and pepper

For serving

  • 8–10 leaves lettuce (butter or leaf lettuce)
  • to taste sliced avocado

Instructions

  1. Combine chicken and remaining ingredients in a bowl.
  2. Add mayonnaise and gently stir to combine.
  3. Serve chicken salad and avocado slice in a lettuce leaf, over mixed greens, on cucumber slices, or on your favorite crackers or toasted bread.
  4. Top with chives and crumbled bacon if desired.
