Ingredients

The dressing

  • ½ cup plain fat free Greek yogurt
  • ¼ cup mayonnaise
  • 2 tsp fresh lemon juice
  • 2 tbsp thinly sliced green onions
  • 1 tbsp minced parsley
  • to taste salt and freshly ground black pepper

The salad

  • 3 cups diced cooked and chilled chicken breast
  • 6 slices bacon, cooked and chopped
  • cups grape tomatoes, halved
  • ½ cup diced celery
  • 1 medium avocado, diced
  • as needed Romaine lettuce leaves, for serving

Instructions

  1. In a medium bowl, mix Greek yogurt, mayonnaise, lemon juice, green onions, parsley, salt, and pepper.
  2. In a large bowl, combine chicken, bacon, tomatoes, and celery. Reserve some for garnish if desired.
  3. Add the dressing mixture to the chicken mixture and toss to coat.
  4. Gently toss in the diced avocado.
  5. Serve the salad over lettuce leaves.
