Ingredients

The salad

  • 1 lb cooked, shredded chicken breast

  • 1 cup chopped kale, deboned

The dressing

  • 1 teaspoon olive oil

  • ½ tablespoon lemon juice
  • ½ teaspoon vinegar-based hot sauce

Instructions

  1. Massage the kale with olive oil for 3-5 minutes until wilted.
  2. Combine shredded chicken, bacon, cherry tomatoes, red onion, and the massaged kale in a large bowl.
  3. Mix the dressing ingredients: Greek yogurt, ranch seasoning, lemon juice, and hot sauce.
  4. Add the dressing to the chicken mixture and combine well.
