BLT Salad
Ingredients
The salad

boneless chicken breasts, thighs or tenders, cut into small pieces

romaine lettuce, chopped (or sub greens of choice)

cherry or grape tomatoes, halved

bacon, diced

salt and pepper
The dressing

green onions, diced

dill (fresh or dried)

mayo

Instructions
- Cut up the chicken and set aside.
- Chop the lettuce and tomatoes, then place them in a large bowl.
- Dice the bacon.
- Heat a large skillet over medium heat and cook the bacon until crispy, about 5-6 minutes. Remove and place on a paper towel-lined plate.
- Season the chicken with salt and pepper. Reserve 1 tbsp of bacon fat in the skillet and add the chicken, cooking for about 6-7 minutes. Set aside to cool.
- While the chicken cools, prepare the dressing by whisking the dressing ingredients together in a small bowl or jar.
- To serve, toss the lettuce, tomatoes, cooked chicken, and dressing in a bowl. Top with bacon bits.
