BLT Salad

Ingredients

The salad

  • lbs boneless chicken breasts, thighs or tenders, cut into small pieces
  • 12 cups romaine lettuce, chopped (or sub greens of choice)
  • 2 cups cherry or grape tomatoes, halved
  • 8 pieces bacon, diced
  • to taste salt and pepper

The dressing

  • 2 pieces green onions, diced
  • 2 tbsp dill (fresh or dried)
  • ¼ cup mayo
  • cup water

Instructions

  1. Cut up the chicken and set aside.
  2. Chop the lettuce and tomatoes, then place them in a large bowl.
  3. Dice the bacon.
  4. Heat a large skillet over medium heat and cook the bacon until crispy, about 5-6 minutes. Remove and place on a paper towel-lined plate.
  5. Season the chicken with salt and pepper. Reserve 1 tbsp of bacon fat in the skillet and add the chicken, cooking for about 6-7 minutes. Set aside to cool.
  6. While the chicken cools, prepare the dressing by whisking the dressing ingredients together in a small bowl or jar.
  7. To serve, toss the lettuce, tomatoes, cooked chicken, and dressing in a bowl. Top with bacon bits.
