Instructions
- Preheat the oven to 180C/350F and line a square pan with parchment paper.
- Prepare the flax egg by mixing ground flaxseed with brewed coffee and let it sit for 10 minutes.
- Melt one cup of chocolate chips in a microwave-safe bowl or on the stove.
- In a large mixing bowl, whisk together vegan butter and coconut sugar until smooth.
- Add the flax egg, melted chocolate, and vanilla extract to the mixture and mix until glossy.
- Sift in the flour, baking powder, salt, and cocoa powder, mixing until just combined.
- Fold in the remaining chocolate chips.
- Transfer the batter to the lined pan and bake for 27-30 minutes.
- Let the brownies cool completely before slicing into 12 pieces.
