Fudgy Vegan and Grain-Free Brownies with Peanut Butter

Ingredients

  • ¾ cup natural smooth peanut butter
  • ¾ cup unsweetened applesauce
  • ¼ cup maple syrup
  • 2 tablespoons maple syrup
  • ½ cup dairy free chocolate chunks/chips
  • 1 ½ teaspoons vanilla extract
  • ½ cup unsweetened cocoa powder
  • 3 tablespoons coconut flour
  • ¾ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • to taste flaky sea salt for garnish

Instructions

  1. Preheat the oven to 350°F and line an 8x8x2 baking pan with parchment paper, greasing it well.
  2. In a medium saucepan, combine the peanut butter, applesauce, maple syrup, and all but 3 tablespoons of the chocolate chunks, heating over medium until melted.
  3. Stir in the vanilla extract and let the mixture cool slightly.
  4. In a separate bowl, whisk together the cocoa powder, coconut flour, baking soda, and salt.
  5. Combine the cooled peanut butter mixture with the dry ingredients until well mixed; the batter will be thick.
  6. Spread the batter into the prepared pan, creating a smooth top, and swirl in additional peanut butter if desired.
  7. Press the remaining chocolate chunks into the top and sprinkle with flaky sea salt.
  8. Bake for 27-30 minutes until firm and slightly dry on top; let cool completely before slicing.
